WHere is a simplified interpretation of a cocktail found on our latest drinks list. It's a party-sized prepared mix that is loaded full of flavours of a festive period, making it ideal for your festive gathering. Reserve the remaining syrup to use in morning drinks, sweets, or to mix another batch of bikinis.
The Bikini Cocktail
Yields 10 guests
Ingredients for the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Cocktail (produces 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Instructions
For the Cordial: Place the listed ingredients in a pan, heat until it reaches a light boil, mixing until the sugar dissolves. Next, take off the heat and leave to cool down completely. Transfer into a sealable bottle, cap it and store in the refrigerator, where it will keep for around a month.
Preparing the Cocktail Base: Mix all the liquid ingredients in a sizeable container, leave to sit for an hour, then strain best through a fine cloth, so it's completely strained.
For serving: Add 85ml from the cocktail base into a stirring glass containing ice, gently stirring gently for about 60 seconds until cold. Strain into an cold coupe glass or a similar vessel, decorate with a few cranberries and complete it with a quick spritz with the mandarin essence over the top.
